3 Fonteinen Doesjel (Season 19|20) Blend No. 85 750ml
This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze. Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release. The oldest lambikken were brewed at the beginning of 2018. This is the first Doesjel in 75cl bottles since 2006. NL 3 Fonteinen Doesjel is een assemblage van lambikken van één, twee en minstens drie jaar oud. Spontaan vergist maar niet meer in de fles. Gerijpt op eiken vaten. Lange bewaring op fles. Ongefilterd. Ongepasteuriseerd. FR 3 Fonteinen Doesjel est un assemblage de lambikken d’un, deux et au moins trois ans d’âge. Fermenté spontanément, mais plus dans la bouteille. 3 Fonteinen Oude Kriekenlambik (Season 20|21) Blend No. 15 750ml
bottling date: 13/01/2021 This is not “any” Oude Kriek, this is Zéér Oude Kriekenlambik. Instead of using one- and two-year old lambik for maceration and blending, this time we used 36% three-year old lambik (yes, like in more than thirty-six months) and 58% two-year-old lambik. The lambikken come from twelve different barrels and eleven different brews. This blend consists of 60% 3 Fonteinen lambik. The final fruit is at 340 grams of sour cherries per liter of this Oude Kriek. EN 3 Fonteinen Oude Kriekenlambik is the slow and all-natural maceration of whole sour cherries on traditional lambik. No addition of juices, syrups, or artificial sweeteners. Unfiltered. Unpasteurised

3 Fonteinen Braambes Oogst 2020 (season 20|21) 750ml
Bottling date: 26/01/2021. For this Braam, they sourced hand-picked blackberries from Ferme Framboos in Huldenberg, Vlaams-Brabant, Belgium. Macerated these for three months in a 50/50 cut with lambikken from five different barrels and five different brews. Before bottling, they added lambikken from another barrel and two different brews. The majority of the lambikken that were used are 3 Fonteinen brewed, and one quarter of those are from our own Brabant farmers’ collective. The final fruit intensity is 384 grams of blackberries per litre of Braam. 3 Fonteinen Braam is the slow and all-natural maceration of hand-picked whole blackberries on traditional lambik. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.

As big fans of geuze-style beers, we wanted to give making our own spontaneous fermentation beer a go. To our own surprise, with success. A side from our own Spierelambiek, our spontaneously fermented beer - named after a tiny river that runs near the brewery -, we use two traditional lambieks from the valley of the river Senne to make a blend. One, two and three year old lambiek is used in Mirakel-beer, our own little miracle.
